This is some of the best Asian food in the Twin Cities. I dine in the restaurant or do take-out at least once every couple months. I am not a veggie but enjoy experimenting with their tofu dishes and enjoy the dishes with meat, too. Favorites include Ma Po Tofu, Eggplant with basil (spicy!), satay sauce beef, chicken in black bean sauce, pan-fried dumplings, sauteed green beans,Taiwanese Style Meat Sauce Noodles.
Veggies used in the dishes are crisp and fresh. My only negative comment is that sometimes the mushrooms used in the dishes appear to be canned rather than fresh.
The restaurant is located in the basement of a small city strip-mall on Nicollet Avenue. The decor is rather basic and stark. This is what many restaurants are like outside the US - you are paying for the food, not the interior decoration. Over the years, the owners have changed lighting and flooring to warm up the ambiance a bit.
My family and I often choose to go to Evergreen when we're in the mood for Asian cuisine. Better food at better prices than many of the trendier restaurants on "Eat Street". Give it a try - either dining in or as take out.

I had brought a friend here to do a school project on ethnic dining. When we got there the layout of the place is somewhat like a school cafeteria. The food was great, it had wonderful flavor. They had a WIDE variety of food for anybodies liking. Some reviews said they over charged their credit card. My bill was 16.38 and in my pending transactions they charged me 20.38. I talked to a lady who owns a restaurant who said some companies will charge 20% or more until the charge clears. So I watched my account and the next day it went through for 16.38, so I WAS NOT overcharged. I just wanted people to know before they thought this place was a rip off.

It's so often that service suffers at family run restaurants that are always busy, but definitely not the case this time.
The food has always been great, and service is excellent as well.
The parking situation in back s very tricky though. Evidently 2430 is the lot you CANNOT park in (that's the child care lot). You'll have to pay a $250 tow if you park there at any time (evidently). We were one of several victims wondering where our vehicles were after the meal... although after a few calls are in the process of getting in resolved out of court for a refund. We were there after hours and on a Saturday so no child care was going on.
IMPORTANT! If you're parking in the back, only the 7 (or so) diagonal spots with the sign in front for 2424 only are for Evergreen parking. Where the "2424" is painted on the ground is NOT.
- Pros: Great food and service
- Cons: Parking is tricky. Definitely a corrupt system.

Know Before You Go:
There are several vegetarian dishes, along with imitation beef, chicken, pork and seafood. All vegetarian dishes are cooked in separate woks.
The Extras:
There's no liquor or dessert, but Azia is only a couple blocks south and offers both until 2am.
Save Time:
This spot is great for takeout--call in your order, then pick it up on your way home from work.
