In Short – Like many a Southern California Mexican restaurant, this brightly colored, festive eatery gives patrons the feeling that they stepped into a friend's casa for a home-cooked meal. That's no coincidence; the owners relocated from the Golden State in the 1980s to open this family-owned, family-frequented cantina. Shakopee suburbanites crowd in for Mexican staples like margaritas, loaded nachos, fish tacos with avocado cream sauce and chiles rellenos--fried green peppers stuffed nightly by Pablo himself.

Wonderful wait staff, we had a very friendly waitress and the food was 100% perfect! I ordered the biggest Margarita ive ever seen (almost embarrasing)

Been going to Pablo's over 13 years, last 4 years food quality / menu changeing, good items disappearing, overall experience becoming disappointing. Last night, 7/30/08 for wife's birthday, was last straw. poor service, I don't care attitude, obviously kitchen management poor, we won't be back. Was GREAT for 1st ten years however.

The food was good, it just tasted good, but it almost tasted like somebody that was good making mexican food invited you to eat at their house more than restaurant food. Salsa was great. Service was nice also. Good drinks. Good value.

For a melodic Mexican experience, stop in from 6pm to 9pm on the first Saturday of each month to enjoy strolling minstrel music alongside your shrimp fajitas.
The Extras:
Die-hard fans don't leave without picking up a jar of Pablo's crowd-pleasing salsa.
Happy Hour:
The bartender serves $1.25 domestic bottled beers and bar rail drinks between 4pm and 6pm every day but Sunday. Pablo's original margaritas can be had for a mere $1.95 during these hours Monday through Thursday.
